When serving in a bowl, sprinkle with coriander, chili oil and sesame oil. 500 grams of lamb. 5 grams of Sichuan pepper, 5 grams of cinnamon, 5 grams of dried tangerine peel, 50 grams of coriander, 5 grams of cardamom, 10 grams of ginger, 5 grams of angelica, 10 grams of onion, 15 grams of fine salt, 25 grams of red oil, 15 grams of Sichuan pepper water, 5 grams of clove powder, 5 grams of cinnamon powder, 5 grams of soy sauce, and 25 grams of sesame oil.

Here’s how to do it:

1) Put the washed and dried meat in cold water (the water volume is about three times that of the meat) and cook over high heat until it is almost boiling. Then turn to medium heat and stir occasionally with a spoon to make the blood foam float to the surface as much as possible. After the water boils, turn to low heat and skim off the foam.

2) Keep the heat low and add only peppercorns and ginger slices to the pot to remove the fishy smell. Do not add cooking wine because it is not a braised dish.

3) It will take about an hour and a half to cook, but the meat is not very tender. Cook it for a little longer. You can decide the time yourself. Cook until the meat is tender and you can easily bite it. Add salt when it is halfway cooked.

4) When serving, put a little chopped coriander at the bottom of the bowl, use a little soup to dissolve the chopped coriander before serving the meat. (Adding some carrot cubes half an hour before serving is both nutritious and delicious, but don’t add too much, otherwise the soup will become sweet.

Note: (1) This method is recommended to use lamb, and beef is recommended to be braised. (2) If the meat is not yet cooked through and there is too little water, you can add more water, but make sure to add hot water.
