1. Cut the old radish into sections and slice the old ginger and crush it.

2. Remove the blood from the old duck and wash it clean.

3. Pour appropriate amount of vegetable oil into the hot pan. Don't put too much, just enough to make the duck pieces evenly coated, then add the duck pieces and stir-fry. Add appropriate amount of cooking wine during the frying process. Remove from heat until the smell of cooking wine disappears and transfer to a stew pot.

4. Use the remaining oil from frying the duck to fry the ginger slices and pickled radish segments. Remove from heat until the steam decreases. Pour into the saucepan along with the remaining oil.

5. After boiling over high heat, pour in beer. Boil over high heat for half an hour, then simmer over low heat for 3-4 hours. It depends on the duck. The older the duck, the longer it needs to be stewed.
