Notice:

1. If you only blanch the shrimp in boiling water during this process, the fishy smell will still remain. If you add ginger, onion and wine and blanch it, the fishy smell can be completely removed.

2. When putting the shrimps into boiling water, do not turn them back and forth to avoid the shrimp heads falling off.

Boiled river shrimp

Main ingredient: river shrimp (500 grams). When purchasing, be sure to choose live and fresh ones.

Auxiliary ingredients: a little salt, a little shredded ginger, a little chopped green onion, and cooking wine.

Wash the river shrimps, put them in a larger bowl, pour in cooking wine, stir properly, cover with a plate and let it sit for 10 minutes. Put a small bowl of water in the pot, pour in the shrimp, add shredded ginger, chopped green onion, salt (not too much), and cooking wine. During the boiling process, stir fry a few times every 1-2 minutes to ensure even heating. You will see the shrimp body slowly turn from green to red. Remove from the heat after 6 to 8 minutes.

Features: The shrimp meat is firm and tender, salty and sweet.

Key points: The shrimp must be alive, and there must not be too much salt, otherwise you won’t be able to taste the sweetness of the shrimp itself. Try not to use other seasonings, as these will cover up the natural deliciousness of the shrimp itself.
