4. Add a little olive oil to the pan. When it is 40% hot, add onions, scallions and garlic and stir-fry until fragrant.

5.1 Add the remaining tomato paste and stir-fry over low heat until the color turns dark.

6.2 Add carrots and celery and continue to stir-fry.

7. Add flour in batches and stir-fry over low heat until the flour and tomato paste are blended and turn brown.

8. Add the roasted beef bones and the removed beef marrow and stir-fry together. If you buy ox tail bones, do not remove the marrow, as the marrow is the key.

9. Add 300ml of red wine and simmer over medium heat. Because of the addition of flour, the wine will thicken quickly. Remember to stir the bottom of the pot to allow the flour to blend into the wine.

10. Move everything into the stew pot. There will be some batter crumbs at the bottom of the pot. Don’t throw them away. Add a little more red wine, scrape them off, and pour the crumbs into the stew pot.

11. Add cold water to the stew pot, covering all the ingredients. The water level can be 2-3cm higher. Bring to a boil over high heat.

12. Add chopped parsley, thyme and basil into the pot, simmer on low heat for 3 hours, filter out the sauce and let it cool to make the sauce. Can be refrigerated.
