Homemade vinegar-fried eggs

Vinegar is a commonly used condiment in Chinese cuisine. It is deeply loved by people because of its sour and fragrant properties that can give food a unique taste experience. Vinegar has many uses in cooking, and stir-frying with vinegar is a common cooking method. Vinegar and ingredients are stir-fried at high temperature to create delicious dishes. For example, vinegar-fried eggs is a typical dish. Let’s take a look at some common methods of making vinegar-fried eggs.

2 tablespoons rice wine, 15 grams starch, 1 tablespoon white sugar, 3 tablespoons vinegar, 2 tablespoons dark soy sauce, salt to taste, a little MSG, 1 small piece of ginger

Method 1:

1. Thin the meat and cut it into strips about 4 cm long and 1 cm square. Add rice wine, salt and MSG to the meat strips and mix well to marinate. Put a tablespoon of sugar, vinegar, soy sauce, salt, MSG and starch in a bowl to make a sauce. Chop the green onion and mince the ginger and garlic.

2. Put oil in a pan and heat it until it is 60% hot. Then mix the meat strips with the egg starch paste. Fry them one by one until they turn slightly yellow and quickly remove them from the pan.

3. When the oil temperature in the pot rises to 70% hot, put the meat strips into the pot and fry them again until they turn golden brown, then turn off the heat, remove from the pot and drain the oil.

4. When pouring out the oil in the pot, leave the bottom oil and heat it to 50% hot, add minced ginger and minced garlic and stir-fry until fragrant, then add chopped green onion and add about three tablespoons of water.

5. Add about three tablespoons of water, bring to a boil and then add the sauce in the bowl.

6. After the sauce is absorbed, pour it over the meat strips.

Method 2:
