French raspberry vinegar recipe

For many mothers, if their babies and loved ones eat healthily, they will get sick less often. Today, I will introduce to housewives a French raspberry vinegar that is suitable for family consumption.

1. Put the raspberries in a large container (a large bottle with a lid is best), pour in white wine vinegar and marinate, seal with plastic wrap to prevent air leakage, and marinate in the refrigerator for 24 hours

2. It is normal for raspberries to turn white after soaking. Separate the vinegar from the pulp using a slotted spoon, but do not squeeze the raspberries to prevent mixing the soup. I put him in the bag and let him drip slowly! The pulp can be used to make fruit vinegar sauce, see below

3. If the original vinegar juice is clear and transparent after gentle filtration, this is the key to the beautiful color of the finished product. Seal the original vinegar again with plastic wrap and store it in the refrigerator for another 24 hours.

4. Find a large pot, add water, then find a small pot, pour the original vinegar juice into the small pot, add sugar and cognac (fruit wine). Please don't be stingy with using good wine here, the finished product will give you a perfect return. I used a 70 year old apple cognac. In a water bath, bring to a boil over medium heat until the sugar is dissolved. The temperature cannot exceed 90 degrees. I set it at 89 degrees. No need to stir in the middle. Just do what you need to do! When the preset temperature is reached, turn down the heat slightly, stir carefully, and continue heating for a few minutes.

5. After the vinegar is cooled, filter it with cotton yarn and bottle it.

6. This fruit vinegar can be stored at low temperature for 7 days and should be consumed as soon as possible. You may find a little brown sediment at the bottom of the bottle, which is normal because the filtering tools we use are far less sophisticated than those in factories, but the flavor is definitely a hundred thousand times stronger than that in factories.
