3. Cut more ginger into shreds and set aside.

4. Firmly insert a pointed chopstick into the upper part of the fresh river crab's fins. This is the heart of the crab. The crab will slowly fall over once the chopsticks are inserted, making it easier to remove the crab later.

5. Open the crab shell, remove the gills, take out the claws, and then use a knife to hit the shell a few times to break it up, leaving the crab shell whole.

6. Split the crab body in half and cut off the tip of the crab legs to make it easier for flavor to enter. Then cut off each leg along with the meat on the crab body.

7. After overheating, pour in a proper amount of oil and slide in the marinated chicken thighs.

8. After the chicken is stir-fried until 50% hot, add shredded ginger and crab, pour in 3 tablespoons of rice wine, 1 tablespoon of light soy sauce, and 1 tablespoon of oyster sauce, and stir-fry evenly.

9. After seasoning, add the crab shell.

10. Cover the pot and bake on medium heat for about 6 minutes.

11. Add 1 teaspoon of sugar before serving, no need to add salt, add appropriate amount of water starch, and thicken the sauce.

12. At this time, add basil and mint leaves, stir-fry for a while, then turn off the heat and enjoy the delicious dish.
