7. Add 3 spoons of dark soy sauce, 3 spoons of soy sauce, and 2 spoons of cooking wine.

8. Pour in enough hot water to cover the pork belly.

9. Move the casserole to the fire and bring to a boil over high heat, skimming off the foam.

10. Turn to low heat, cover and simmer for 1.5 hours.

11. Open the lid and turn to high heat to reduce the sauce.
