1. Make a cup of slightly stronger Longjing tea.

2. Wash the prawns and cut off the whiskers and claws.

3. Use a toothpick to poke into the second section from the shrimp head and pick out the shrimp (if it breaks, move down one section and pick out).

4. Use your index finger and thumb to hold the shrimp head and tail, press your ring finger forward against the shrimp's belly, and use a knife to cut a hole in the shrimp's belly.

5. Filter the brewed tea, add a small spoonful of salt, and soak the processed shrimps for 20 to 30 minutes to remove the fishy smell and add flavor.

6. Use kitchen paper to absorb the moisture of the filtered tea leaves and set aside.

7. Take out the shrimps soaked in tea, drain them, and absorb the moisture with kitchen paper.

8. Pour a little more oil into the pot, add tea leaves when the oil temperature is low, and fry over medium heat.

9. Fry until the tea leaves become crispy, remove from the oil and set aside.

10. Increase the oil temperature in the pan, pour in the shrimps, and fry over high heat until the shrimp shells become crispy.

11. The fried shrimps should have swollen bellies, some spaces between the shells and the meat, and the shells should feel noticeably crispy.

12. At this time, remove the shrimps from the oil and drain them, using oil-absorbing paper to absorb excess oil.

13. Pour out the oil used to fry the shrimps, clean the pot, turn on medium heat, pour in the fried shrimps, sprinkle with pepper and salt, and stir-fry evenly.

14. Pour in the fried tea leaves, stir-fry evenly and serve.
