Salt and pepper shrimp skewers

1. Clean the shrimps. (Because it is a live shrimp, remember to cover it with a lid after cleaning it, otherwise it will jump everywhere)

2. Blanch the bamboo skewers in boiling water, mince the ginger and garlic, and set aside the pepper and salt powder. (If you don't have bamboo sticks, you don't need them)

3. Use a toothpick to pass through the middle of the first to last section and the second to last section of the shrimp body, pick up and cut the shrimp line, then pinch the broken line end and pull out the shrimp line. (Move slowly)

4. Cut off the shrimp claws and antennae of the processed shrimps one by one.

5. Use blanched bamboo sticks to string the shrimps and clean them.

6. Heat the oil in the pan and gently put the shrimp skewers in. (If you think it's too oily, the amount of oil should be enough to cover half of the shrimp. The shrimp skewers must be drained to avoid oil splashing when frying)

7. When the surface of the fried shrimp turns slightly yellow, remove from the oil.

8. When the oil temperature reaches 80% hot, fry the fried shrimps again. (The second frying is to fry the oil inside the shrimp; the key to the shrimp being crispy on the outside and tender on the inside)

9. Leave a proper amount of oil in the pan, add medium-low heat and sauté the ginger and garlic.

10. Add 1 spoon of cooking wine to enhance the flavor and remove the fishy smell.

11. Add appropriate amount of pepper and salt powder, stir slightly with chopsticks, and serve when the seasoning sticks to the shrimp skewers.

12. If you don’t have pepper and salt powder, you can replace it with cumin powder, barbecue powder, or other flavors.

13. The remaining shrimp oil can be used to make stir-fried dishes or fried egg rice, which is very fragrant.
