Preparation of medicinal brine:

1. Make the broth: 40 jin of pork leg bones (chopped), 1 clean old hen and 1 old duck, wash and blanch them separately, remove them and rinse off the foam on the surface, put the pork bones in the bottom of the soup bucket, then put in the hen and duck, add 80 jin of water and bring to a boil, skim off the foam and pour in 200 g of rice wine, 300 g of ginger slices and 300 g of scallion segments, bring to a boil over high heat and then simmer over low heat for 4 hours, remove the residue, and you will have about 65 jin of broth.

2. Spice bag: 40 grams of star anise, 30 grams each of angelica dahurica and cinnamon, 25 grams each of white cardamom, 20 grams each of pepper and cinnamon, 15 grams each of fennel, grass fruit and galangal, 10 grams each of hawthorn and sand ginger. Soak the above spices in warm water for 20 minutes, drain and fry them until fragrant, then put them into gauze to make a spice bag.

3. Medicine bag: Rinse and drain 100g each of Angelica sinensis and Codonopsis pilosula, then put them into gauze.

4. Vegetable package: Put 1500 grams of sliced ​​ginger, 500 grams of shallots, 200 grams each of dried chili peppers and garlic cloves into 60% hot oil and fry until fragrant. Remove from the oil and put into a gauze bag.

5. Fig powder: Rinse off the surface dirt of 3000 grams of dried figs, place them on a tray lined with tin foil, bake in an oven at 200℃ for 20 minutes, take out and grind into powder in a food processor.

6. Put the spice bag, vegetable bag and medicine bag into the broth and heat for 30 minutes. Add 1000 grams of rice wine, 700 grams each of sesame oil and scallion oil, 550 grams of salt, 300 grams of fig powder, 150 grams of MSG, 100 grams each of light soy sauce and fish sauce, mix well, and simmer on medium heat for 10 minutes.

Batch prefabrication:

Scorch 50 pig front trotters to remove all remaining hair, scrape and wash them clean, split them in half lengthwise, blanch them in boiling water until they change color, remove them from the water, rinse off the foam on the surface, drain them, then put them into boiling marinade and simmer on low heat for 2 hours. At this time, pinch the pig's trotters with your fingernails and you can easily pinch to the bone. Remove the pig's trotters and let them cool. Cut each half into three pieces, put them in a fresh-keeping box, and continue to soak them in marinade to make them tasty.

Process of serving dishes:

Cover the baking tray with tin foil, brush with a layer of butter, place 4 pieces of braised pig's trotters on it, and bake in the oven at 250℃ for 4 minutes. Take out and sprinkle appropriate amount of dry powder on the surface, garnish with green onions and white sesame seeds, and serve.

Put the powder into a plastic bottle, poke a small hole in the bottle cap, and spray it on the roasted pig's trotters to make it more evenly flavored.

Dry powder production:

1. Crush 600 grams of Huang Feihong spicy peanuts into small pieces. Crush 450 grams of cumin into semi-granules. Make sure there are both powder and granules. This will add flavor to the ingredients and give them a granular feel when eaten.

2. Mix the above two ingredients, add 450 grams of salt, 300 grams of chili powder, 200 grams of MSG, and 50 grams of five-spice powder and mix well.
