How to make steamed buns

To make delicious buns, you must first start with kneading the dough. Use half whole wheat flour and half white flour, pour into a basin, use chopsticks to make a well in the middle, pour in a small amount of water, and add an appropriate amount of yeast powder. For “appropriate amount”, you can refer to the instructions on the yeast package. When you first start making it, you may not have experience and may have questions about how much to put in. But it doesn’t matter. If you put in too little, the fermentation time will be longer. On the contrary, if you put in too much, it will not affect anything. The key is to make sure you check the production date and shelf life of the yeast. Expired yeast will not be able to make dough. Add water while stirring with chopsticks until the flour forms flakes. Finally, knead the dough into dough, apply some water on the surface of the dough to keep it moist, cover it, and place it in a warm place to ferment. Here are some of the more popular ones:

1. Crystal Shrimp Buns

Ingredients: 200 grams of wheat starch, 100 grams of shrimp, assorted vegetables (including corn, green beans, and radish cubes), and appropriate amount of chopped green onions.

Method: 1. Make the filling: first chop the shrimp, mix it with assorted vegetables and chopped green onions, add appropriate amount of salt, MSG, pepper, sesame oil and rice wine, mix well, and marinate for 30 minutes.

2. Make the dough: Pour wheat starch into a bowl, boil water, and pour it into the bowl of wheat starch. Stir with chopsticks while pouring, and make sure to mix well. Boil the powder until it becomes transparent. After it cools down a little, make it into foreskin.

3. Wrap the fillings into the bun skin, pinch it into a bun shape, and put it in the steamer.

4. Pour clean water into the pot, turn on high heat, and after the water boils, put the steamer in and steam for 10 minutes.

2. Custard Buns

Ingredients: 5 eggs, 125 grams of starch, 25 grams of custard powder, 250 grams of milk, 125 grams of melted butter, 400 grams of fine sugar.

Method: 1. Add eggs one at a time into material 2 and mix into a paste.

2. Heat the milk and cream in a water bath, add sugar to the milk and stir until the sugar melts.

3. Add the egg paste prepared in step 1 into the pot, stir continuously with a wooden ladle, and heat until it becomes gelatinous before removing from the pot.

3. Soup dumplings

Main ingredients: 1000 grams of flour, 600 grams of warm water, 700 grams of pork belly, 280 grams of pork skin jelly, 160 grams of crab meat, 40 grams each of crab roe and soy sauce, and 100 grams of lard. Auxiliary ingredients: 6 grams of cooking wine, 8 grams of sesame oil, 5 grams each of sugar, chopped green onion, minced ginger, 15 grams of fine salt, 1 gram each of pepper and MSG.

Preparation: 1. Add water to flour and knead thoroughly, then let it sit for a while. 2. Chop the pork into minced meat and the crab meat into small pieces. Heat lard in a pot, add the crab meat, crab roe, and minced ginger to stir-fry the crab oil, then mix with the minced meat, jelly, soy sauce, cooking wine, etc. to make the filling. 3. Roll the dough into long strips, pinch it into 4 pieces of 50 grams each, roll it into round skins, add stuffing and pinch it into pleated buns, put it in a steamer and steam it over high heat for 10 minutes.
