1. Wash the fresh mackerel and cut it into pieces about 2 cm thick. The stall owner will help you cut it in this step.

2. Pour a little white wine, apply fine salt, marinate for 20 minutes, wash and dry for later use;

3. Add a little oil to the pan and heat over medium-low heat until medium-high, then add a little salt to prevent sticking;

4. Add the mackerel, fry over high heat for one minute, then switch to low heat. During this time, scoop up the oil next to it and pour it over the fish. The cut is a bit thick, so it took about four minutes to fry.

5. Carefully use a spatula to push the fish lightly around, turn the fish over and continue frying. When the heat is right, the fish will move easily. If it is difficult to move, continue frying until it can move. Then pour a small amount of water from the side of the pot to prevent the fish from losing too much water, fry the surface until it is dry and then serve on a plate;
