Ingredients: 2 and 1/3 cups plain flour, 1/4 teaspoon salt, 1/4 teaspoon baking powder, 150 grams of unsalted butter, softened at room temperature (or 150 grams of ghee will also work), 1 cup of white sugar, 1 large egg, 1 egg yolk. (Note: 1 cup = 250ML)

Method 1. Mix flour, baking powder and salt in a large bowl. 2. Take another large bowl, add butter and sugar, and use an electric mixer to beat at medium speed until light and fluffy (the volume becomes larger, the color becomes lighter, and it becomes fluffy), which takes about five minutes. 3. Add eggs and egg yolks to step 2 and mix well. 4. Gradually add 1 to 3 and mix well. 5. If you get dough after mixing, flatten the dough, wrap it in plastic wrap, and then use a rolling pin to roll it into a large piece of 3MM thick, and use a cookie mold to cut out biscuits. If you don't have a cookie cutter, you can use a knife to cut the large dough into small squares of the same size, or you can find a round object of appropriate size to make a cookie cutter. The dough that is not used up at one time can be pressed into dough sheets, wrapped in plastic wrap and frozen. If the batter is very thick, put it into a piping bag and squeeze it onto the baking sheet. 6. Preheat the oven to 160C and bake for 12-15 minutes. 7. Shaping: 1) Let the cake cool completely after baking and spread jam in the middle. 2) Before putting the cookies into the oven, brush a little water or egg wash on the surface and sprinkle with chopped walnuts.

Be sure not to rush to avoid separation of the egg and oil. The butter does not need to be over-beaten. The entire whipping process can be controlled within about 5 minutes (depending on the specific situation). Replace the same amount of flour with 30 grams of cocoa powder to make chocolate-flavored butter cookies. The cookies bake for a short time and are easy to burn, so be sure to watch them during the last few minutes. You can take them out when they are baked to the color you like.
