1. Prepare the ingredients. For pork chops, mainly choose prime rib, which tastes better. Boil water before cooking.

2. Heat the ribs in cold water and turn off the heat after the water boils.

3. Cut the green onion into sections and the ginger into large slices. Peel and wash the garlic.

4. Make the sauce with light soy sauce, dark soy sauce, oyster sauce and salt.

5. Add appropriate amount of water to starch and mix well.

6. Heat oil in a pan, add ginger slices and stir-fry.

7. Add green onions and stir-fry until fragrant.

8. Add rock sugar and stir-fry until melted.

9. Add the ribs.

10. Stir-fry until the surface turns slightly yellow

11. Pour in the sauce and stir fry evenly.

12. Pour boiling water until the level of the ingredients is reached, then add fennel. Bring to a boil over high heat then reduce to low heat. The boiling water boils quickly.

13. When the soup is reduced by half, pick out the scallion segments, pour in the starch sauce, and stir it.

14. Stir well and continue cooking on low heat.

15. Fry until the soup is reduced to one third, then turn to high heat to reduce the soup according to your preference. Do not let the soup dry up. It is very good to eat with rice.
