How to stir-fry dried radish

1. Pour the pork into the pot with cold water, add two slices of ginger and a spoonful of cooking wine to remove the fishy smell, and cook until the pork is cooked through. You can poke it lightly with chopsticks and no blood will come out.

2. Wash the dried radish and soak it in water for later use.

3. Chop the onion, ginger and garlic, remove the hair from the cooked pork skin (I have burned it before cooking), and then cut it into slices of even thickness.

4. Heat the pan with cold oil, pour in the meat slices after the oil is hot, and stir-fry over medium-low heat until the fat spit out oil and curls up, and dimples appear in the meat slices.

5. Pour in the Pixian bean paste and stir-fry over low heat until the oil turns red. Then add in the scallion, ginger and garlic and stir-fry until fragrant.

6. Turn to high heat, add dried radish and stir well, add a tablespoon of cooking wine, appropriate amount of sugar and a tablespoon of water, stir well and remove from heat.
