Second, the delicious fried dory fish. Cut the dory into pieces, sprinkle with a little salt, and mix with egg liquid and a little sesame oil. Dip in fried flour and then egg liquid again. Finally, dip it in bread crumbs and let it soak for 3 to 5 minutes. Heat oil in a pan at 120°C and proceed with step (3). Deep-fry over medium heat until browned (about 80% done), remove from the pan; then turn to high heat and raise the oil temperature to 170°C, fry until deep golden brown, remove from the pan and drain. Before serving, sprinkle with salt and pepper.

How to make delicious Dory fish? Steamed Dory fish. Defrost and clean the dory, marinate it with soy sauce and cooking wine for 20 minutes, chop the scallion, ginger and garlic and set aside. Place the fish on a plate, cover it with chopped ginger and garlic, pour in a small amount of cooking wine and soy sauce water, then put it into the steamer and steam it for about 10 minutes. Add a little salt, sprinkle with chopped green onions, and steam for another 2-5 minutes before serving.
