How to make Tangzhong cocoa toast

It is nice to eat at home usually and go out occasionally to change the taste, but now some people do just the opposite, they always eat out usually and cook for themselves occasionally. In fact, this eating habit is very unhealthy. The method of Tangzhong cocoa toast is simple, and you can make it at home even if you have limited time.

1. To make the soup, weigh 20g of flour and 100g of water in a small bowl and mix well.

2. Put it in a milk pot and cook on low heat until it becomes a sticky rice paste. Stir constantly to prevent the pot from sticking.

3. Heat it to about 65 degrees and it will look like the rice paste in the picture.

4. Pour the soup into a small bowl, cover with plastic wrap and cool for later use

5. Put 45g water, a medium-sized egg (about 50g), 2g salt, 50g sugar, 245g high-gluten flour, 12g cocoa powder, 3g yeast powder, and 90g tangzhong into the bread machine bucket.

6. Turn on the bread machine's quick dough kneading function and start kneading the dough.

7. After finishing, add the softened butter at room temperature and turn on the quick dough kneading function for another 20 minutes.

8. After 0 minutes, knead the dough into a glove film and the kneading is finished

9. Put it in a large bowl, cover with plastic wrap and ferment at room temperature for about 1 hour

10. Wait until it is twice as big and then take out the vent.

11. Divide into 3 portions evenly after exhausting the air, cover with plastic wrap and let rise for about 15 minutes

12. Roll the risen dough into a tongue-shaped shape about 30 cm long.

13. Turn over and roll up from top to bottom

14. Roll up the other doughs and place them neatly in the toast mold.

15. Put it in the oven for secondary fermentation. Put a baking tray with hot water at the bottom to increase the temperature and humidity for about 50 minutes to an hour. Change the hot water once in the middle.

16. Stop fermentation when it is 90% full as shown in the picture.

17. Put it in the preheated oven at 170 degrees and bake at 170 degrees for about 25 minutes.

18. Bake for about 5 minutes until the surface is fully colored, then cover with tin foil to prevent the color from being too dark.

19. After 5 minutes, the toast is ready. Remove from the mold while hot. The finished product is very soft.
