How to make fermented bean curd and scallion pancakes

1. Pour the flour into a bowl, add sugar and stir well (adding sugar will make the crust more crispy).

4. Add two teaspoons of vegetable oil. Adding vegetable oil can make the pancakes crispy.

5. Knead the dough into a dough that is softer than the usual dough for making dumplings.

6. After the dough is kneaded, apply a little vegetable oil on the surface to prevent it from wrinkling easily; cover with a wet cloth and sugar for 5 to 10 minutes.

7. While the dough is resting, wash the green onions and cut them into chopped green onions.

8. Crush the fermented bean curd with a spoon and set aside.

9. Sprinkle a little dry flour on the chopping board and place the dough with sugar on it.

10. Knead the dough until it is smooth, and use a rolling pin to roll it into a rectangle. The thickness can be determined by yourself, and it can be thicker than the dumpling skin.

11. Spread the crushed fermented bean curd and sprinkle with chopped green onions.

12. Start rolling from one end, pressing it tightly in circles.

13. Roll to the other end and roll it into a round barrel shape.

14. Use a knife to cut the rolled pancake into even-sized pieces.

15. Stand the cut cakes upright and press them flat with your hands. Then sugar them for 10 minutes.

16. Heat the electric baking pan, put the pancakes on it and start baking.

17. Bake until there are crackles on both sides, then brush with oil. Bake both sides first and then brush with oil. The baked pancakes will be more fragrant and crispier.

18. Bake until both sides of the pancakes are golden brown.
