How to make spicy fried skin residue

1.1 Cut the red pepper and green pepper into shreds and set aside.

2.2 Prepare sweet potato vermicelli (preferably the kind that can be cooked directly without soaking), chop green onion, ginger, garlic, and thirteen spices for later use

3.12 Remove the sweet potato vermicelli when it is soft. Do not overcook it, otherwise the finished product will not be chewy enough. Add half of the chopped green onion, ginger, garlic, thirteen spices, salt, chicken essence and mix well while hot.

4.21 After mixing, spread the vermicelli in a clean container. Dissolve the sweet potato starch in water to make starch slurry, pour it in, and cover the surface of the vermicelli.

5. Use the remaining starch paste to smooth the surface, then steam it in a steamer over high heat for 15 minutes until the starch paste becomes transparent, then take it out and let it cool.

6. After it cools down, peel off the powder and cut it into the size you like.

7. Heat the oil in the pan, add the flour cubes and stir-fry until it is non-sticky. Remove from the pan and drain the oil.

8. Pour out the oil, clean the pan, turn the heat back on low, and roast the peppercorns with a little oil.

9. Put the peppercorns aside or remove them, then add the red pepper shreds, onions, and the remaining chopped green onions, ginger, and garlic and stir-fry until fragrant.

10. Pour in the flour, turn to medium heat and fry, spray cooking wine along the edge of the pot

11. Add soy sauce, sugar, and a little salt (you don’t need to add more if you added enough before)

12. Add green pepper shreds and sprinkle with white sesame seeds before serving
