1. Wash and clean the young spinach with roots.

2.Put water in a pot and add the washed spinach when the water starts to bubble.

3. Blanch the spinach until it changes color and becomes soft, then remove from the water and set aside.

4. Split the larger spinach into pieces to make it easier to season.

5. After the black fungus is soaked, blanch it in boiling water and remove it from the water for later use.

6. Cut the black fungus into shreds and set aside.

7. Peel the garlic, put it into a garlic mortar, add a little salt and smash it into garlic paste.

8. Pour in appropriate amount of sesame oil.

9. Season with one tablespoon of super fresh soy sauce, stir well and set aside.

10. Beat the eggs into egg liquid.

11. Put a pot on the fire and use a brush to brush a layer of oil on the bottom of the pot. After it is slightly hot, pour in the egg liquid.

12. Shake the pan, spread the egg liquid into an omelet, and fry it over low heat.

13. After one side is fried until golden brown, use a spatula to turn the omelet over and fry the other side.

14. Cut the fried omelet into thin strips.

15. Take a clean container, put in spinach, eggs, fungus, dig in the prepared garlic paste, and mix well.
