As for whether to cut the chicken feet, it is up to you. The most important thing when cooking chicken feet is to blanch them before putting them in the pot. One is to remove the blood, and the other is to cook them. Otherwise, it will be difficult to cook them simply by stir-frying or other methods.

Ingredients: one pound of fresh chicken feet, five or six cloves of garlic, four raw peppers, a few slices of ginger, three tablespoons of soy sauce, one tablespoon of sugar, one tablespoon of white vinegar, a pair of scissors, and a basin of ice water.

Preparation method:

(1) First go to the vegetable market to buy fresh chicken feet. Although supermarkets also sell chicken feet, the chicken feet in supermarkets are not fresh, so if there is a vegetable market near your residence, it is best to buy them there. When choosing chicken feet, try to pick those with good color and are larger, and avoid those that are skinny.

(2) Chop the chicken feet in half, or you can chop out the chicken feet. Another advantage of buying chicken feet at the market is that you can ask the boss to chop them for you, saving you the trouble of chopping them yourself when you get home. In order to make it more enjoyable to chew chicken feet, it is best to remove the nails of the chicken feet. Some bosses selling chicken feet will help you remove the chicken nails if they are nice. If you encounter someone who is not nice, you can only chop off the chicken nails slowly after you go home. It is recommended to cut the chicken nails yourself with clean scissors.

(3) Boil half a pot of water in a soup pot, pour the cut and cleaned chicken feet into the pot and cook, adding a few slices of ginger to remove the fishy smell. The cooking time should be based on whether you can poke the chicken feet with a chopstick. Skim off the foam on the water while cooking.

(4) While cooking the chicken feet, smash and chop the garlic and chop the chili pepper and set aside. The ice water should be chilled in the refrigerator in advance. If you put the water in the refrigerator after you start cooking the chicken feet, the water will not be cold enough when the chicken feet are boiled, so it is best to put the water in the refrigerator the night before.

(5) Drain the cooked chicken feet and pour them into the ice water prepared earlier. In addition to cleaning the chicken feet, this step also has another more important function: to lock the collagen in the chicken feet, making them chewier.

(6) After soaking in ice water, drain the chicken feet and put them in a glass container. Pour in the prepared garlic and chili peppers (optional if you don’t like spicy food), 3-4 spoons of light soy sauce for coloring, 1 spoon of oyster sauce, 1 spoon of sugar, and 1 spoon of vinegar. Then mix well.

(VII) Cover the glass container containing the chicken feet and put it in the refrigerator overnight. Eat it the next day. Mmm, it is full of collagen, fragrant and crispy, and so delicious that you can't stop eating it.
