2. Cut the hairtail into sections, clean and drain. Set aside.

3. Chop the green onion, shred the ginger and red pepper, and cut the coriander into sections for later use.

4. Heat the oil in a wok until 70% cooked, then sauté scallions and shredded ginger.

5. Put the hairtail pieces into the wok, pour in white wine (to remove the fishy smell) and light soy sauce, fry for a while, then pour in rice vinegar (to enhance the flavor) (do not use a spatula to stir, pick up the handle of the pan and shake it so that the hairtail will not fall apart).

6. Pour in clean water until the water level is level with the hairtail.

7. Then sprinkle in onion, ginger, garlic powder, salt and dark soy sauce.

8. After boiling, cover the pot and simmer on low heat.

9. Shake the pan handle 2-3 times during the cooking process to allow the hairtail to absorb the sauce better and prevent it from sticking to the pan.

10. When the juice is 70% reduced, sprinkle in the shredded red pepper and simmer for another minute.

11. Serve on a plate, sprinkle with coriander and place in the refrigerator for one hour before serving, or refrigerate overnight for a better taste.
