With the arrival of hot summer, mung beans have become an indispensable food. Cooking some mung bean soup, mung bean porridge, etc. can clear away heat and detoxify and prevent heatstroke. Sometimes we find that mung beans are not cooked through after a long time of cooking. We can freeze the mung beans in the refrigerator for a while and they will be cooked quickly. When buying mung beans, buy fresh ones, pay attention to whether there are holes or mold on the surface, and observe the color of the mung beans to distinguish the quality of the mung beans.

First, we wash the mung beans, take them out and put them in a bowl, then add a bowl of water and put the mung beans in the freezer of the refrigerator to freeze them. Frozen mung beans are easier to cook.

Then we pour the frozen mung beans into the boiling water. Utilizing the principle of thermal expansion and contraction, the mung beans will quickly bloom. Cover the lid and cook for five minutes and the mung bean soup is ready.

Quick Cooked Green Beans:

① Before cooking porridge, put the mung beans in a wok and stir-fry for one to two minutes, then put them in the pot and cook them quickly.

②After the porridge is boiled, add cold water to the porridge. After the mung beans are stimulated by the cold water, they will bloom easily and can be boiled quickly.

③Wash the mung beans and soak them in boiling water for 10 minutes. After cooling, put the mung beans into the freezer of the refrigerator, freeze them for 4 hours, take them out and cook them again, the mung beans will become soft and tender soon.

How to choose mung beans

1. Determine whether the mung beans are fresh. When choosing mung beans, be sure to choose those that are not moldy, insect-infested, or spoiled. Fresh mung beans should be bright green, while old mung beans will turn yellow.

2. Determine whether mung beans are contaminated. To see whether mung beans are contaminated, one is to see whether the mung beans are shriveled and wrinkled, and the other is to see whether the mung beans have a pungent chemical smell.

3. Mung beans that are uniform in size and free of impurities and worm holes are high-quality mung beans; low-quality mung beans contain a lot of impurities such as sand and gravel, and most of them have high water content and are easily affected by moisture and mold. You can feel the dampness by putting your hand into the mung bean bag.

If you want to drink mung bean soup right after buying mung beans, and there is no time to freeze the mung beans, we can put the washed mung beans directly into the pot and stir-fry them. After the water is dried up, add cold water directly into the pot. When hot mung beans meet cold water, the mung bean skin breaks faster. After the water boils, cook the mung beans for a few more minutes until they bloom.
