1. Cut the tofu into 1.5 cm square cubes, soak the dried shrimps in boiling water and cut into small pieces, pick the rapeseed, wash it and chop it.

First, do not eat too much tofu. It is best to control it within 100-150 grams per day, otherwise it may cause the following health problems:

1. Indigestion. Tofu is rich in protein. Eating too much at one time will not only hinder the body's absorption of iron, but also easily cause protein indigestion, resulting in uncomfortable symptoms such as bloating and diarrhea.

2. Cause renal function decline. After plant protein is ingested by the human body, most of it is metabolized into nitrogenous waste and excreted from the body through the kidneys. If you eat tofu in large quantities for a long time and ingest too much plant protein, it will inevitably cause excessive nitrogenous waste in the body, increasing the burden on the kidneys. Especially for the elderly whose kidneys have a reduced ability to excrete waste, their kidney function may further decline.

3. Promote the formation of arteriosclerosis. There have been reports from abroad that the rich amino acids in soy products can be converted into cysteine, which will damage the endothelial cells of the arterial walls after being ingested by the human body, easily causing cholesterol and triglycerides to deposit on the arterial walls, and promote the formation of arteriosclerosis.

4. Produce gout attacks. Tofu contains a lot of purine, which can easily cause uric acid stones or gout attacks in gout patients with abnormal purine metabolism and patients with increased blood uric acid concentration.

Second, when eating tofu, you should pay attention to the combination to avoid the following troubles:

Low protein utilization. The soy protein contained in tofu lacks an essential amino acid - methionine. If consumed alone, the protein utilization rate is low. Solution: Eat it with fish, eggs, meat and other ingredients rich in methionine, such as fish head tofu, scrambled eggs with tofu, minced meat tofu, etc., which can balance the overall amino acid ratio and help the protein in tofu to be fully absorbed.

Leads to iodine deficiency. Soybeans contain a substance called saponin, which can cause excessive excretion of iodine in the human body. Long-term and excessive consumption of tofu can easily cause iodine deficiency. Solution: When eating tofu, don’t forget to pair it with some iodine-rich ingredients, such as kelp.

Stones are formed. Tofu is high in calcium. If it is often eaten with vegetables with high oxalic acid content, it will produce calcium oxalate which is difficult to absorb and may cause stones. Solution: If you want to eat tofu with vegetables high in oxalic acid, such as spinach, water spinach, red amaranth, and wild rice, you must blanch the vegetables to reduce the oxalic acid content.
