How to make tea-braised chicken

1. Prepare tea leaves and various spices, wash the chicken legs and drain them for later use; put the Tieguanyin tea leaves into a cup, add 300ml of boiling water, cover the lid and simmer for 10 minutes, then drain the tea.

2.1 Add light soy sauce, dark soy sauce, peppercorns, dried chili peppers, bay leaves, star anise, ginger slices, scallions, Shaoxing wine and salt. Bring to a boil over high heat and then add the chicken legs. Use medium-low heat to keep the marinade at a slight boil and continue cooking for 50 minutes. Turn the chicken legs over when it is halfway through cooking. After 50 minutes, add rock sugar and cook until it is completely melted. Then take out the chicken legs and leave them until they are no longer hot.

3.2 Put the chicken legs into boiling water and simmer over high heat for 5 minutes. After the blood foam is separated, remove the chicken legs and drain the water. Add about 800 ml of hot water to the pot and pour the tea into the pot.

4. Chop the marinated chicken legs into pieces, place them neatly on a plate, and pour appropriate amount of marinade on the chicken pieces.
