How to make tofu and vegetable soup

1. One and a half pounds of tender tofu. (It must be soft tofu, old tofu, the kind with brine is not acceptable)

2. Crush it with your hands. The most time-saving and labor-saving method is to make the tofu into small pieces. The smaller the tofu is, the better the taste will be. (You can also use a larger spoon to crush it.)

3. Finely chop the onion and ginger

4. Take half a pound of pork filling and put it into the shredded tofu together with the chopped green onion and ginger.

5. Beat in a whole egg. (Egg white is best, I usually use whole eggs, which will not affect the taste and color of the egg yolk)

6. Add cornstarch. The ratio of cornstarch to tofu is generally: one and a half pounds of tofu plus a little more than one or two pounds of cornstarch. (Based on my experience, I personally recommend sweet potato flour, which is sticky and has a good texture)

7. Two spoons of salt

9. Stir all the ingredients together

10. After the tofu dumplings ingredients are mixed, just wait for the meatballs to be put into the pot. (If you don't cook it right away, the tofu will release water, but that's okay. Just add a little cornstarch, not too much. Too much cornstarch will make the tofu hard.)

11. Take a relatively large pot, add cold water and make the water wider. Turn on the fire. When small bubbles start to appear at the bottom of the pot, turn down the heat and start boiling the meatballs. Take a small rice spoon, scoop a spoonful of the mixed tofu filling and put it in the palm of your hand. Use the power of your palm and the spoon to gently beat the filling to shape the loose tofu into balls.

12. Keep the water cool and add the tofu balls

13. When the balls turn white and float, you can turn up the heat.

14. Peel the choy sum and cut into dices

15. Pour into the pot

16. Cover the pot and cook over medium-high heat for 20 minutes
