Hunan Rice Tofu Recipe
Chinese cuisine has a history of more than 5,000 years, and each place has its own unique food. For example, Shaanxi’s cold noodles and roujiamo, Shandong’s steamed buns, Sichuan’s hot pot, Hunan’s rice tofu, and so on. Hunan rice tofu has the effect of softening blood vessels and can also clear away heat and reduce internal heat. Hunan rice tofu is simple to make. The main ingredients are rice and lime. Method: 1. Select materials. The raw materials are mainly rice and lime. Early, mid-season and late indica rice are preferred, broken rice is also OK, but japonica rice and glutinous rice are not suitable because they are too sticky and difficult to process. It is better to use new lime. 2. Soak. Before soaking, remove debris from the rice, rinse it clean, then put it in a container and add water until the rice is 3.5 cm deep. Add 50 grams of powdered lime to 1 kg of rice. Lime should first be mixed into a slurry, added to the flooded rice, and then stirred evenly. Soak for 3-4 hours until the rice turns light yellow and has a bitter taste, then take it out and rinse it in clean water until the water is clear. 3. Grinding. The ratio of water to rice for grinding is 1 to 2.

4. Boil the pulp. Put an appropriate amount of water (2 kg of water for 1 kg of rice) into a clean iron pot, and then pour in the ground rice slurry. When cooking the slurry, stir while cooking. Start with high heat, then lower the heat when it is half cooked, stirring while cooking, until cooked through. It takes about 15 minutes. 5. Molding. The cooked rice milk becomes a paste and is poured into a pre-prepared container while it is still hot. The size of the container is determined by the thickness of the rice tofu, generally 3-10 cm is appropriate. A thin cloth should be placed inside the container and the thickness should be even when filling. Wait until cooled.
