In addition to hot pot base, Sichuan’s more famous specialties include cured meats. 3. 4. Simmer over low heat until the cured pork ribs can be easily pierced with chopsticks. Pour the chopped winter melon into the pot, leave a few small pieces of winter melon peel, wash them and put them in together. Bring to a boil over high heat, then simmer over low heat until the winter melon can also be pierced with chopsticks. Turn off the heat, transfer to a large bowl and serve.
