Ginger and Scallion Chicken Casserole Recipe

Onions and ginger are very common condiments in our daily life. In addition to being used for seasoning, they can also be used in diet to make many delicious foods. Green onion, ginger and chicken hotpot is also one of the very distinctive dishes. The specific method is also related to personal cooking habits, so the methods are varied and the taste is also different. So what is the complete recipe for the scallion, ginger and chicken pot?

1. Method 1

Wash angelica and cinnamon; wash and pit red dates; wash chicken and ham, and cut into 4 cm square pieces; wash carrots and cut into pieces; smash ginger; cut green onions into sections; wash mushrooms and make cross-shaped cuts on the tops of mushrooms. Heat a wok over high heat, add vegetable oil, and when it is 60% hot, add ginger and scallions and stir-fry. Add chicken, mushrooms, angelica, cinnamon, red dates, carrots, and ham and stir-fry until well mixed. Add chicken broth and simmer until thick. Add salt and soy sauce as appropriate.

2. Method 2

Wash and chop half a chicken into pieces, then add appropriate amount of salt, 1 spoon of sugar, 1 spoon of light soy sauce, 2 spoons of starch, 1 spoon of cooking wine, a little oil, mix well, and marinate for 30 minutes. Cut the green onion into sections, cut some green onion into chopped pieces, and set aside 4 slices of ginger. Put chicken fat in the pot and cook it over high heat first. When the chicken fat shrinks, turn to low heat. After the chicken fat shrinks, throw away the residue. Turn to high heat and add scallion, ginger slices and garlic. After the scallions and ginger are sautéed, add the chicken pieces and fry until golden brown. Add 2 spoons of cooking wine, 3 spoons of light soy sauce, 1 spoon of oyster sauce, and 1 spoon of sugar, stir fry evenly, simmer for 5 minutes, and sprinkle with chopped scallions and sesame seeds.

3. Method 3

Wash and drain the chicken, peel and mince the ginger, and chop the green onion; add salt, ginger and a little oil to the green onion and mix well. Apply half of the chopped green onion and ginger inside the chicken and the other half on the outside. Marinate for about 2 hours. After boiling water, steam the chicken over medium heat for 20 minutes. After turning off the heat, steam it for 3 minutes before taking it out. Just take out the chicken and cut it into pieces, then pour the soup, green onion and ginger in the plate over the chicken.

4. Method 4

Clean the chicken and cut it into small pieces. Add a little light soy sauce, sesame oil, salt and sugar and mix well. Add 1 tablespoon of cornstarch, stir evenly and marinate for 1 hour. Peel and slice the ginger, and cut the green onions into sections. Heat half a tablespoon of sesame oil, add ginger slices and stir-fry over low heat. Add the scallions and chicken pieces and stir-fry over high heat until evenly mixed. Then add a little water, oyster sauce and dark soy sauce and stir-fry until the chicken pieces are cooked through. Finally, add the scallions and starch sauce and stir-fry evenly.
