How to make cured meat casserole porridge

1.1 Soak the black fungus in boiling water in advance, wash the carrots, ginger, shallots, sausages, and black fungus, slice the sausages, cut the black fungus and egg skin into shreds, and chop the carrots/ginger/scallions into fine pieces.

2.2 Wash the rice, add a few drops of sesame oil, and then soak it in cold water for 2 hours (the ratio of rice to water is 1:12, and it is easier to boil when a little oil is added, which is called "blooming" in professional terminology)

3. Add minced ginger, sausage and dried shrimp to the soaked rice, place the casserole on the stove, bring to a boil over high heat, skim off the floating residue, then turn to low heat, keep boiling while stirring, and cook until the rice is melted. There are two key points here. One is low heat, and the other is constant stirring. Low heat can prevent the porridge from overflowing, scalding yourself, and dirtying the stove. Constant stirring can make the rice melt better and prevent the bottom from getting sticky. It takes about thirty minutes. If you are impatient, you can stir while surfing the Internet. 4. Add diced carrots, shredded black fungus, and shredded egg skin. Cook for two minutes, then turn off the heat. Sprinkle with black pepper, chopped green onions, and drizzle with sesame oil. Personally, I suggest that you let it sit for a while until it is slightly warm before eating it. If it is too hot, it will be bad for your esophagus. Maybe some friends asked me whether to add salt or not. Because the sausage itself is salty in the porridge I made, so it is naturally not necessary. If you make shrimp porridge, crab porridge, fish fillet porridge, etc., then of course you need to add salt.
