1. Take only the clear part of the noodle soup from the boiled noodles, let it warm but not cool, and pour it into a ceramic container (preferably ceramic, not other plastic bowls or something like that).

7. Prepare side dishes: People in Guanzhong usually serve it with fried leeks. You can also choose other dishes, but leeks have always been favored by people in Guanzhong because of their unique aroma and the combination with the rice water.

8. Boil noodles, handmade wide noodles, or dough sheets. It is best not to use thin noodles or dried noodles instead, otherwise you will not be able to experience the smooth taste of the noodles. When the noodles are cooked in a separate pot, put them into the soup and serve in bowls.
