2. Pour water into the pot and bring it to a boil. Put a cloth on the steamer and put in the noodles. Do not compact them. Make them as fluffy as possible. Cover the pot and steam them over medium heat for 15 minutes after the water boils. Let the steamed noodles cool.

3. Put the same amount of oil in the wok as you would for normal cooking, add the star anise and Sichuan peppercorns and fry until fragrant, then remove them and add the lamb and stir-fry until the oil is almost dry.

4. When it turns golden brown, add cooking wine and dark soy sauce, stir well, then add onion slices and ginger shreds and stir-fry until fragrant.

5. Pour in the garlic sprouts and bean sprouts and stir-fry evenly. Then add salt, dark soy sauce, and five-spice powder and stir-fry for two minutes (use a little more dark soy sauce so that the noodles can be well colored).

6. Add water until the level is almost parallel to the vegetables.

7. Bring to a boil over high heat, then switch to medium heat and stir-fry until the vegetables are cooked, with a little more than half of the water remaining.

8. Move the vegetables aside to separate them from the water. Use chopsticks to shake the noodles little by little and mix them with the vegetable water. The remaining water is just enough to mix the noodles.

9. Boil the water in the pot again, put a layer of vegetables and then a layer of noodles in the cage covered with a cage cloth. Put all the vegetables and noodles into the cage and cover the pot.

10. Steam over medium heat for another 10-15 minutes. (The vegetables and noodles are already cooked, and steaming them again now is to make the noodles better flavored).
