How to make New York cheesecake

If it is still not soft, you can steam it in water (low heat) (you can put a rag under the pot to prevent the pot from shaking, but the pot should be deeper to prevent water from entering the pot and contacting the cream cheese) and stir it with a whisk until it is soft.

3.2 The cream will become a slightly hard jam-like state and is ready to use as sour cream. (If not in use, store in the refrigerator first)

4.121 Add Sour Cream in batches and stir evenly until it becomes cream-like

5.212 Add fine sugar in batches and stir until smooth

6. Add the eggs one by one, stirring evenly after each addition.

7. Add animal cream and mix well

8. Add corn starch and mix well

9. Pour into the mold and preheat the oven

10. Add lemon juice and homemade vanilla extract and mix well.

11. Put a layer of baking paper inside the baking pan and wrap it with tin foil outside (if it is not a removable bottom pan, you don’t need to wrap it with tin foil)

12. Pour into the mold and preheat the oven

13. Put hot water in the baking tray and put a rag under the baking mold to prevent shaking. Bake at 180℃ for 30 minutes, then switch to 160℃ for 30 minutes, for a total of one hour
