Chicken and Yam Soup

It is delicious to stew yam and chicken together, mainly because yam contains more nutrients, and chicken contains more protein. Stewing the two together can well supplement the nutrients needed by the body. If you want to make yam stewed chicken, it is best to choose chicken feet or chicken bones, so that the chicken will not be too tough. Moreover, chicken feet and other bones are better for making soup than chicken meat.

Material

1 carrot, 1 chicken foot, 5 grams of salt

Method 1

1. Peel the yam, wash it, and cut it into pieces; peel the carrot, rinse it, and cut it into pieces;

Chop the chicken feet into pieces, blanch them in boiling water, then remove and rinse.

2. Put the chicken and carrots into the pot first, add water to cover the ingredients, bring to a boil over high heat, then simmer over low heat for 15 minutes.

3. Add yam and bring to a boil over high heat, then reduce to low heat and continue cooking for 10 minutes.

4. Add salt to taste.

Method 2

1. After slaughtering the chicken, clean the abdominal cavity and chop it into small pieces. Wash the green onion and ginger, slice the ginger, and tie the green onion into green onion knots.

2. Put the chopped chicken into the pot, add enough cold water, bring to a boil, skim off the foam, add a tablespoon of cooking wine, add ginger slices and scallion knots,

3. After boiling, turn to low heat, cover, and simmer for about 30 minutes. (Because I use a cast iron pot, stewing soup takes less time than using a normal pot, so if you use a casserole or other pot to stew soup, you will need to extend the stewing time.)

4. Peel the yam and cut it into small pieces. Add it to the pot and continue to simmer for 10 minutes with the lid on. Rinse the wolfberries with clean water, open the lid and add them. Continue to simmer for 10 minutes with the lid on. Add salt to taste.[1]

1. When making soup, do not add water during the process and cook it in one go. This is because the temperature of the soup will drop suddenly, and the protein in the meat will suddenly coagulate and will no longer be fully dissolved in the soup, thus damaging the flavor of the soup. Therefore, after putting the ingredients into the pot, add enough water at one time and do not add water in the middle.

2. Wolfberry should not be added too early. It should be added five to ten minutes before removing the pot from the heat. Adding it too early will affect the medicinal properties of wolfberry.
