How to make homemade puff pastry

1. To make the puff pastry: Put flour, salt, sugar, 20g of soft butter and warm water into a basin. Begin by mixing the dough using the spiral end of an electric mixer. Place on a floured board. The dough is very soft and sticky at this point. Sprinkle a thin layer of flour on the chopping board several times and knead the dough until it is not sticky and smooth.

2.12 Take the plastic wrap and put the dough in it. First fold the plastic wrap into a rectangle. Then flatten the dough until it almost fills the space created by the folded plastic wrap. Place in refrigerator and chill for 40 minutes.

6. Fold the dough into three parts, as shown in Figure 9. Wrap in plastic wrap and chill in the refrigerator for 20 minutes.

8. Remove the edges of the puff pastry and cut into a square and 8 long strips.

9. Pineapple pudding Danish: Take a square piece of puff pastry. Use a sharp knife to cut a square on the surface, leaving a 1cm margin. The depth is about half of the dough.

10. Pudding cream layer: Whip the cream, add Cream Cheese and pudding powder, mix well, put in the refrigerator and set aside. Pineapple filling: Dice the pineapple flesh, bring to a boil with lemon peel and lemon juice, then turn to low heat and cover and simmer for 5 minutes. Mix the starch and mochi evenly, add to the pineapple, bring to a boil again, and simmer until thick. Let cool and set aside.

11.Put the puff pastry into the preheated oven at 180 degrees for 20-25 minutes until golden brown.

12. Let the baked puff pastry cool. Use a small spoon to scoop out the middle part along the square you drew previously.

13. Fill the scooped out portion with the pudding cream layer. Finally, spread the pineapple filling on the pudding cream layer.

14. Cheese puff pastry strips: pinch the two ends of a long strip of puff pastry with both hands and twist it into a spiral shape in opposite directions. Sprinkle with salt and grated cheese to taste.

15. Bake the cheese crisps in a preheated oven at 180 degrees for 20-25 minutes until golden brown.
