How to make fancy coconut bread

1. First, make the coconut filling. Soften the butter and add sugar and mix well.

2. Add egg liquid in batches and mix well

5. Next, knead the dough. Mix all the bread ingredients except butter, add water last, and adjust the amount according to the flour's absorbency.

7. Knead until it stretches and forms a thin film

8. Cover with plastic wrap for basic fermentation

9. Let the base ferment until it is twice as large. Basic fermentation can be done in a warm place or a cold place, as long as it can double in size.

10. Take out the dough, let it air out, divide it into 12 equal parts, roll it into balls and let it rest for 15 minutes. The total weight of the dough is 500g, and each portion is more than 40 grams

11. Divide the coconut filling into 12 equal portions. The total amount of coconut filling is 200g, and each portion is a little more than 15g.

12. Take a piece of relaxed dough, flatten it and put a coconut filling in it. Press the filling with your right thumb and use your left hand to gradually close the dough until the filling is completely covered.

13. This time I made two shapes. First, let’s look at the heart-shaped one. After wrapping the filling, close the edge and put it on the panel, and then roll it into an oval shape.

14. Fold the lower long side upwards first

15. Fold the right corner to the left, leaving 7-8cm on the right corner, and cut it in the middle with a knife.

16. Flip the cross section upwards and a lovely heart shape will appear.

17. Make a flower shape (this shaping is also often used in pastries with puff pastry fillings). After wrapping the filling, close the top and place it on the panel, and slightly roll it into a round shape (don’t make it too thin, otherwise it won’t fit on the baking tray).

18. Use scissors to cut out four even pieces (as shown in the picture)

19. Cut again between every two cuts to get a total of eight petals (as shown in the picture)

22. The flower-shaped ones take up more space, so I made four of them, leaving space between each loaf.

23. Put the baking tray into the oven for secondary fermentation until it is twice as large (as shown in the picture). I allocated the two baking trays like this: put the baking tray that is baked first on the upper layer of the oven, use the microwave to beat two cups of hot water for 2 minutes each and put them in the baking tray, then close the oven door. Put the baking tray to be baked later into the microwave and close the door. Because it is still warm from adding water, the second tray will be ready when the first tray is done. The secondary fermentation time is about 40 minutes. If the water changes temperature and it is not fermented well, heat it again.

24. Put it in the preheated oven at 170 degrees on the middle layer for 12-15 minutes. Remove from the oven when the surface turns golden brown. The flower-shaped ones are thinner and will turn yellow in about 12 minutes; the heart-shaped ones need 15 minutes. The specific time depends on the temperament of your own oven, so you need to be flexible.
