4. Add 35 grams of fine sugar, 45 grams of corn oil and 40 grams of water to 150 grams of ordinary flour, mix well and knead into a smooth dough, which is the water-oil dough. Add 23 grams of corn oil to 55 grams of low flour and knead evenly to make shortcrust dough. Cover the kneaded water-oil dough and shortcrust dough with plastic wrap and let it stand for 30 minutes.

5. Divide the oily dough and the shortbread dough into 10 portions each.

6. Take 1 portion of oil dough and flatten it lightly with your palm, then wrap it with 1 portion of shortcrust dough and pinch the opening to make the shortcrust dough.

7. Wrap all the puff pastry dough one by one and let it rest with the seam facing down for about 10 minutes.

8.Take 1 portion of puff pastry dough and gently roll it into the shape of a ox tongue.

9.Roll it up from top to bottom.

10. Make all the dough in turn, cover with plastic wrap and let it relax for 15 minutes, then unfold and roll it up. Repeat the above steps three times. After each step, you must relax for 15 minutes before repeating the next time.

11. Use the relaxation time to prepare the filling: cut the steamed salted egg yolk into 10 pieces, and divide the lotus paste into 10 portions as well.

12. Take 1 portion of lotus paste, wrap the cut egg yolk in it and gently roll it into a ball.

13. Make all the fillings one by one.

14.Take 1 portion of puff pastry dough and gently roll it out.

15. Wrap one portion of the filling, push the dough upwards gently with your hands until the filling is completely wrapped, then pinch the opening to close and gently roll it into a ball.

16. Place the wrapped dough with the seam facing down into the baking tray, and continue to make all the dough one by one.

17. Brush a thin layer of egg liquid on the surface of the raw dough and sprinkle a little black sesame seeds for decoration. Preheat the oven in advance: 170 degrees on the middle layer for 20 minutes, then move to the top for another 5 minutes.
