How to make Korean sweet potato noodles

1.1 Seasoning: 3 tablespoons soy sauce, 2.5 tablespoons sugar, 2 tablespoons sesame oil, 2 teaspoons minced garlic, 2 teaspoons roasted sesame seeds, mix well.

2. Soak 2170g dried sweet potato flour in warm water until softened.

3.1 Bring the water to a boil, add the softened sweet potato flour, boil for 6-7 minutes, remove from the water and rinse with cold water, cut it into short pieces twice, put it in a large bowl, mix it with 2 tablespoons of seasoning and set aside.

4.2 Soak some dried mushrooms, cut into strips, mix with 1 tablespoon of seasoning and set aside. Shred shallots and carrots.

5. Blanch the spinach in boiling water, remove from the water, rinse with cold water, squeeze out the water, cut into sections, and mix with some pepper and salt.

6. Stir-fry shallot and carrot shreds in oil until fragrant, add pepper and salt, and serve. Stir-fry dried tofu mushrooms and add a little seasoning.

8. Stir-fry the sweet potato flour over medium heat until it becomes transparent and a little sticky. Turn off the heat and add the separately fried shallot shreds, carrot shreds, mushroom shreds, spinach and remaining seasonings. Mix well.
