[Main ingredients] 400g sauerkraut, 200g pork belly

[Seasoning] 20 grams of hot pot base, 2 spoons of light soy sauce, 1 spoon of cooking wine, 1 spoon of oyster sauce, half a spoon of sugar

Cooking steps:

The first step is to prepare the ingredients. Wash the sauerkraut and cut it into sections. Add two spoons of cooking wine to the pork belly and cook it, then cut it into slices. Chop the onion, ginger and garlic and set aside. Because sauerkraut is a pickled product, it is usually very salty, so you need to rinse it several times when washing it. It is best to soak it in water for a while before rinsing it. Cook the pork belly until it is 70% to 80% cooked.

The second step is to sauté the Sichuan peppercorns at the bottom of the pot. Just put a small amount of oil in the pot. The pork belly will release oil in a while. After the Sichuan peppercorns are fried until slightly black, remove them and discard them.

The third step is to add the pork belly slices and fry slowly over medium-low heat to release the oil. After the pork belly is browned on both sides, add chopped green onion, ginger, and garlic, add a piece of hot pot base, and stir-fry evenly.

Step 4. There is already a lot of oil in the pot. The mixture of lard, cooking oil and pepper oil is particularly fragrant. Drain the sauerkraut, squeeze it dry with your hands, turn on medium heat, put it in the pot and stir-fry for 3 minutes, add two spoons of light soy sauce, one spoon of oyster sauce, one spoon of cooking wine, and half a spoon of sugar, continue to stir-fry for 2 minutes, then remove from the pot and serve.
