How to make pork with mustard greens

You can make it at home in the future.

1. Soak the dried mustard greens for ten minutes, wash thoroughly until the water runs clear, and cut them if they are long.

2. Use a knife to scrape off the fat from the pork belly, remove any hair, and wash it.

3. Add cinnamon, fennel and ginger slices to the pot, put the large pieces of pork belly in, add cold water to boil, and cook until 80% cooked, about 20 minutes

4. Take out the pork belly, drain the water, and brush the skin repeatedly with dark soy sauce.

5. Add oil to the pan, add garlic seeds and stir-fry until fragrant, then put the pork belly in, fry skin side down, until the skin is wrinkled and gauze-like.

6. Remove the pork belly from the frying pan and cut it into wide slices, preferably 0.5 to 0.7 cm thick (please ignore my terrible knife skills)

7. Add the remaining dark soy sauce, 2 tablespoons of light soy sauce, 3 tablespoons of cooking wine, 1 tablespoon of rock sugar, and 1 teaspoon of salt to the frying pan, and put the sliced ​​pork belly in and cook for a while.

8. Take out the pork belly and place it on the bottom of the bowl with the skin facing down.

9. Put the clean dried mustard greens into the original pot and stir fry for a while.

10. Place the dried vegetables on the pork belly, pour the remaining soup into a bowl, cover with 1 tablespoon of crushed rock sugar, cover the bowl, put it on the steamer and steam over high heat. After boiling, turn to medium heat for about 40 minutes, turn off the heat and simmer for a while before taking out

11. If there is too much soup, you can pour it out separately. If not, you can eat it directly. It is very simple to cover the plate. (I can't operate it with one hand and take pictures, so the steps are omitted) Take a large plate, cover the bowl, then turn it over, and take away the bowl. Therefore, if there is too much soup, it should be poured out in advance, otherwise it will be flooded.

12. Thicken the soup with a little water starch and pour it over the vegetables.
