How to cook pork ribs in soy sauce

1.1 Leave a shallot and cut it into chopped green onion; boil an appropriate amount of water in a pot, blanch the ribs for about two minutes, and after the blood foam is separated, pick it out with chopsticks, then rinse it with hot water and drain the water

2.2 Wash the ribs, carrots, shallots, and ginger, and prepare the garlic, peppercorns, dried chili peppers, star anise, cinnamon, and bay leaves; slice the ginger; slightly smash the garlic and remove it; tie the shallots into a knot; cut the carrots into pieces of about the same size as the ribs

3. Put the wok on the fire, pour in a proper amount of oil, heat it over medium-high heat until it is 60% cooked, pour in the blanched ribs, turn to low heat, and stir-fry until the surface is slightly yellow; add garlic, ginger slices, rock sugar, shallots, dried chili peppers, peppercorns, star anise, cinnamon, and bay leaves and stir-fry for 1 minute

4. Add the fragrant glutinous rice juice and dark soy sauce and stir well, then add appropriate amount of hot water, preferably enough to cover the ribs. Bring to a boil then simmer for one hour

5. Add carrots and salt, continue to simmer for 20 minutes, sprinkle with white sesame seeds and chives before serving
