3. Pour 1 teaspoon of cooking wine into the pot to disperse the wine smell, push the minced meat to the side of the pot, pour the mixed sauce: 1 spoon of Pixian bean paste, 1 spoon of sweet noodle sauce, 1 spoon of chili oil into the center of the pot, stir fry until red oil oozes out

4. Stir-fry the minced meat and the mixed sauce evenly, pour the chopped black fungus and shimeji mushrooms into the pot and stir-fry together, add half a bowl of water to the pot and bring to a boil, then turn to medium-low heat, cover and simmer for 3-5 minutes

5. Add salt (the sauce for noodles and rice can be slightly heavier) and dark soy sauce as appropriate, and dilute 1 teaspoon of dry starch with water and pour into the pot

6. Turn up the heat to collect the sauce. Be sure to stir with a spatula to ensure that the sauce is evenly coated. Before removing from heat, add 1 teaspoon of pure sesame oil and a little balsamic vinegar and stir evenly.
