The difference between nori and kelp

The difference between nori and kelp

Nori is a common snack in life, especially children like to eat it very much. Nori also has another very special function, which is to use it to wrap sushi. Sushi wrapped with seaweed has the taste of the ocean, making it not feel greasy when eaten. Like nori, there is also kelp, an algae substance that grows in the sea. But what is the difference between nori and kelp?

Nori

Nori is laver, belonging to the phylum Rhodophyta and family Rhodophyceae. The algae are purple or white, and are composed of a single or double layer of cells forming a thin film, and can be leaf-shaped, heart-shaped, ribbon-shaped, etc. The rhizoid-like holdfasts at the lower part of the porphyra are attached to the rock. It can reach 20-30 cm in height. It is dioecious and has a complicated reproduction process. In 1955, Chinese scientists first figured out the survival history of laver, which consists of three stages: laver, filamentous body and small laver. The main components of laver are about 50% carbohydrates, about 30% crude protein, rich in vitamins A, B, C, and iodine, phosphorus, calcium, etc. It is a commonly used food in our country and is distributed in mainland my country.

kelp

Kelp is an algae belonging to the Laminariaceae family of algae. Animal shape: The algae is brown, long and ribbon-shaped, leathery, generally 2-6 cm long and 20-30 cm wide. The algae body is clearly divided into holdfast, stalk and blade. The holdfast is rhizoid-shaped, with a short and thick cylindrical petiole and severely long ribbon-shaped leaves on the upper part of the petiole. There are two parallel shallow grooves on the leaves, with the middle band at both ends, 2-5 mm thick, and the two edges of the middle band are thinner and have wavy wrinkles. It is farmed along the coast of our country and can be found on rocks 2-3 meters deep below the high tide line in the wild. The sodium alginate in kelp has the effect of preventing leukemia and osteomalacia; it also has a hemostatic effect on arterial bleeding, and oral administration can reduce the absorption of the radioactive element strontium-90 in the intestine. Sodium alginate has a blood pressure lowering effect. Kelp starch has the effect of lowering blood lipids.

In recent years, it has been discovered that an extract from kelp has anti-cancer effects. Kelp mannitol is not effective in treating acute renal failure, cerebral edema, Japanese encephalitis, and acute glaucoma. People with weak spleen and stomach should eat less.
