Homemade eggplant fried noodles

Everyone knows that fried noodles is a way of cooking noodles. You can add your favorite ingredients and stir-fry them according to your taste. Eggplant is a vegetable that can lower blood pressure. Eating more eggplant can supplement vitamins and beautify your skin. You can stir-fry eggplant with noodles. The noodles will be delicious, nutritious and tasty. If you have good cooking skills, the aroma will linger between your teeth. The following is the homely method of making fried eggplant noodles.

1. Main ingredients: 500g noodles (shrimp noodles), 300g eggplant, 50g coriander, 15g peanut oil

1. Prepare the noodles. Add appropriate amount of water, oil and salt to the soup pot. After the water boils, add the noodles and cook while stirring until cooked.

2. Take the noodles out of the cold river and drain them. Prepare other ingredients. Dice the eggplant and soak it in clean water to prevent it from turning black. Chop the coriander.

3. Heat oil in a pan, add eggs, and fry over low heat. How to cook eggplant fried noodles

Fry until cooked, cut into shreds and set aside. Heat another pan with oil, stir-fry eggplant, add salt, cook until soft, and set aside.

2. Main ingredients: 80g shredded pork, 200g eggplant, 305g noodles, 550g peanut oil, 3 tablespoons soy sauce, 1 tablespoon refined salt, cooked shredded pork, eggplant (washed and cut), noodles (blanched and cooled)

1. Heat 550 grams of oil in a pan, add the chopped eggplant and fry until soft, then remove from the pan . Then, leave a proper amount of base oil in the pan, add the fried eggplant, cooked shredded pork and cooled noodles and stir-fry.

2. Then, add 3 tablespoons of soy sauce and 1 tablespoon of salt, season and stir well.

3. Main ingredients: 1 eggplant, 3 bacon strips, some white mushrooms, some chopped green onions, some pickled cucumbers, 1 pack of green tea noodles

1. Prepare the ingredients and cut them into dices. Heat a dry pan without adding oil, add diced white mushrooms and stir-fry until fragrant. Add a little oil and add diced bacon and pickled cucumber.

2. Add diced eggplant and stir-fry evenly. Add soy sauce, oyster sauce, cooking wine and stir-fry evenly. In another pot, cook the green tea noodles, rinse with water and set aside.

3. Pour the toppings on top and sprinkle with some green onions for garnish.

Tips:

1. Eggplant must be cooked, otherwise it will taste bitter.

2. Mushrooms taste better when stir-fried in a dry pan, and they are healthier as they do not absorb oil.

3. Green tea noodles can be replaced with any other noodles. This dish is suitable for thin noodles.
