How to make dough

The method of making dough is a home-cooked dish with a very lifelike flavor. You don’t need to prepare seasonings deliberately to make this dish. Just the basic salt, MSG, soy sauce and vinegar at home can make a delicate dish. The soup of this dish looks even more delicious and makes people drool.

1. Add 3 grams of salt to 1 jin of flour, knead with cold water. The dough can be a little harder. Let it rest for 10 minutes after it forms a ball.

2. Start washing your face by rubbing it in the water.

3. Find a larger basin and pour some cold water into it. Do not cover the dough. Pour water halfway into the dough.

4. Wash the noodles in water four or five times, leaving the slightly yellow gluten.

5. When the water becomes turbid, change the basin of water. Do not pour out the water left over from washing the noodles. Keep it in a larger basin so that you can use it later.

6. Then use a spoon to stir the water at the bottom of the basin.

7. Put the water for washing face in a large basin and let it settle for three or four hours. Do not touch it at will during this period. The water for washing face after settling will be clear on top, and the flour will sink to the bottom of the basin. Skim off the clear water on top.

8. Filter the flour water with a sieve to remove the dough lumps and leave the flour water without impurities.

9. Prepare 2 flat plates to use alternately

10. Brush a thin layer of cooking oil on each plate.

11. Pour a spoonful of noodle water into the plate, put it into the boiling pot, cover and steam for 2 to 3 minutes. The thickness of the dough can be controlled by yourself.

12. The dough peeled off after cooling is very transparent.

13. Steamed dough. Then put the second plate in the pot and steam it. The method is the same as step 11. Steam the two plates alternately.
