How to make rock marinated tofu pudding

1. This is the raw soy milk I bought.

2. Pour the soy milk into the pot and start heating.

3. After a few minutes of cooking, there will be changes, bubbles will begin to appear, and the soy milk will more than double in size. At this time, you can turn down the heat. If the soy milk continues to grow, turn off the heat directly. At this time, the soy milk is not cooked and is not tasty.

4. I boil the soy milk once because I want to make tofu pudding.

5. After turning off the fire, stop for a few minutes and then start cooking again. If it continues to grow after boiling over medium heat, you can turn off the fire again. It will not grow after stopping for a few minutes and then turning it back on again. You can cook over low heat for a few minutes and let it cool before drinking. By boiling it repeatedly in this way, the soy milk will taste good and fragrant. If you boil it once and then stop boiling, the soy milk will definitely have a bean smell and will not taste good.

6. Pour into a bowl and start to cook tofu pudding.

7. The small plate contains rock brine. Rock brine is a block, like a rock. It will automatically melt when it comes into contact with water and turn into water, as shown in the picture.

8. Pour a small spoonful of rock brine into the soy milk bowl and swirl it slowly to allow the brine to blend evenly into the soy milk.

9. Add the brine twice. When you can clearly see the solidified blocks, don't be impatient. Stir the soy milk slowly with a spoon. When you see a lot of solidified blocks, it's done.

10. There are a lot of solidified lumps, so you can eat it directly. This is tofu pudding made with rock brine, unlike gypsum tofu pudding, which has no water and is like steamed egg custard.

11. If you like spicy food, add chili oil, some salt and some chopped green onions to make it taste better.

12. This is the original flavor. If you want to eat sweet, you can sprinkle some sugar on it.

It is nice to go to a restaurant occasionally to change your taste, but it is best not to go there too often. The method of making rock-braised tofu pudding is simple, so it doesn’t matter if you are not a good cook.
