How to make authentic Northeastern kimchi spicy cabbage

The preparation of authentic Northeastern pickled cabbage is simple and it tastes delicious. It is a very popular dish among people.

1. Cut the purchased cabbage into two halves without washing.

3. After applying, marinate in a cool place for 3 hours

4. Spread a layer of fine salt evenly on each leaf.

5. Next, wash the peppers, ginger and garlic.

6. Chop the ginger into small pieces, peel the garlic, remove the head of the chili and cut it into sections, then put them into a blender and blend them (if you don’t have a blender, you can chop them with a knife)

7. Chop everything up and put it in a plate. Add 40g of salt, MSG and sugar and mix well.

8. The chili sauce is ready. Set aside for later use.

9. After three hours of pickling, the salt has fully forced out the water, and the cabbage becomes soft (this state proves that it has been pickled). At this time, you need to add clean water to the basin and rinse it three or four times to wash away the dirt and salt in the cabbage (because the pickled cabbage will be very salty, so rinse it several times, so that the final product will not be too salty and the taste will be just right). Remember to squeeze out the water after washing!

10. Now start to spread the chili sauce evenly on each leaf.

11. The picture shows half of the cabbage. Continue to apply the same method to the other half.

12. After applying both, put them into a fresh-keeping bag (you can also use a glass fresh-keeping box, wrap the box with plastic wrap or seal it with a fresh-keeping bag)

13. Tie a knot to seal the mouth to prevent contact with air, put it in the refrigerator, and it can be eaten after 7 days of refrigeration (=^▽^= There will be most of the chili sauce left at the end, which can be used for daily consumption or to make another portion of kimchi)
