How to make fried dough sticks without additives

Additive-free fried dough sticks is a dish that many people can make. It does not require complicated ingredients. Simple firewood, rice, oil, salt, sauce, vinegar and tea can prepare an exquisite and delicious dish. If you add a bowl of soup to this dish, the effect will definitely be better. You don’t need to add too much salt, just a light vegetable aroma is fine.

1. Put ordinary medium-gluten flour in a bowl, mix in yeast powder, fine salt, and beat eggs until foamy. Pour into the flour and mix. Add appropriate amount of water, about 200 grams, and knead into dough. Adjust the amount of water according to the softness and hardness. The dough for fried dough sticks should be soft rather than hard, otherwise it will definitely not rise.

2. After fermentation, take out the dough, sprinkle a little flour on the chopping board to prevent the dough from sticking, roll the dough into three-centimeter-thick strips, then use a rolling pin to press it into eight-centimeter-wide and 0.5-centimeter-thick long noodles, and then use a knife to cut two-centimeter-wide strips.

3. Apply a little oil on the kneaded dough and wrap it with plastic wrap or a fresh-keeping bag. Remember to leave enough space, because it will two or three times larger after fermentation. Put the wrapped dough in a warm place at room temperature of about 20 degrees. It takes about an hour. The dough will be successful if it has a smooth surface, expanded volume, and many evenly distributed bubbles when torn open.

4. Pour oil into the pot and heat it. Put a small piece of dough into the pot. The suitable oil temperature is that the dough will slowly and evenly expand and float to the surface of the oil. The oil temperature should be kept within this range. Remember not to set the oil temperature too high because it is the yeast that makes the dough rise and it takes time. If the oil temperature is too high, the surface will crust over prematurely and the dough will not rise.

5. The last step is to start frying. Stack the noodles cut into strips on top of each other, use a chopstick to press a horizontal groove in the middle along the long direction, lift the pressed noodles with both hands and gently pull them into twice as long thin strips, put them in the oil and blanch them for a few times, then pinch the noodles on your fingers with both hands to make the whole noodle go into the oil pan, use chopsticks to turn the noodles over slowly and evenly, fry until they are puffed and golden, then take them out, and the delicious and safe fried dough sticks are ready!
