Homemade mushroom and eggplant recipe

How to cook eggplant with mushrooms

1. Wash the eggplant and cut it diagonally on both sides, but do not cut it off. Wash the hot peppers and slice one and chop the other. Wash and slice the mushrooms and carrots. Chop the onions and garlic. Add soy sauce, cooking wine and thirteen spices to the meat filling and stir clockwise until evenly mixed for later use.

2. Heat the oil in a pan until it is 90% hot, add the eggplant and fry until cooked, then remove from the pan and drain the oil.

3. Leave some oil in the pan and add the minced meat. Stir-fry until the meat changes color and then add the scallions to sauté until fragrant.

4. Add the mushroom slices, oyster sauce and sweet noodle sauce and stir-fry, then add a small bowl of water and simmer until boiling.

5. Add the fried eggplant and simmer until the juice is reduced.

6. Add hot peppers, carrots and salt and stir-fry evenly.

7. Add chopped chili pepper, stir-fry evenly and turn off the heat.

8. Add minced garlic and stir-fry evenly.

9. Remove from the pan, place on a plate and serve.
